Wild Rice-Blueberry Muffins
Ingredients needed:
3/4 cup all-purpose flour
1/2 teaspoon nutmeg
1 egg white
1/4 cup maple syrup
1/4 cup skim milk
1/2 teaspoon grated lemon peel
1/4 cup cooked wild rice
1/4 cup fresh or frozen blueberries

Heat oven to 400o. Line 6 muffin cups. In large bowl, combine dry ingredients. In another bowl, mix egg white, syrup, milk, and lemon peel. Add these wet ingredients to dry with overmixing. Fold in rice and berries. Divide amoung muffin cups. Bake 25 mintues, until tops are brown.

Serves 6
