Pork There was a time when folks worried about nematodes in fresh pork and therefore overcooked it to eliminate these fears. Trichinosis, the disease caused by the nematodes, has been all but eliminated from commercial pork. But even when an infestation is present, spores are killed when the meat reaches an internal temperature of 137°, well below the doneness recommended to produce juicy pork.
