Dr. Shapiro's Thai Iced Tea

Ingredients Directions
  • 4 cups water
  • 3/4 cup Thai tea (available at Asian food stores - sometimes labeled Thai herbal mix)
  • 1 1/2 cups suger syrup (mix one cup suger with one cup water, bring to boil - reduce heat and boil for 5 minutes - cool to room temp.)
  • Crushed ice
  • Evaporated milk or 1/2 & 1/2
  • Bring plain water to boil, add tea and remove from heat, stiring tea well into water. Steep for 5 minutes. Strain out leaves (fine mesh strainer) - put tea to cool in fridge for several hours. When cold, decant into new container (leaving sediment in old container) and add syrup.

    To serve: fill glass 1/2 full with ice, 3/4 cup tea and 3-4 tablespoons of milk or 1/2 & 1/2. To make stronger, cut back on ice and increase tea. (We usually skip the ice, altogether ==8-)
