Dr. Freed's Grilled Pizza

Dough:
  • 3 cups of flour
  • 1/2 cup corn meal
  • 1 package sun-dried tomatoes (not in oil)
  • 1-2 tbs fresh chopped garlic
  • 2 tps salt
  • 1 tbs yeast
  • 2-3 tbs olive oil
  • 1 cup water
Combine all dry ingredients. Add water. Knead until dough is smooth and satiny. (This can be done in a food processor, but you must finish kneading by hand.)

Let the dough rise until double in size (approximately 1 hour.)

Pizza Ingredients
(Combine them together in a bowl)

  • Feta Cheese
  • Sauted onions and garlic
  • Fresh tomatoes, chopped
  • Black Olives, sliced
  • Thyme to taste
  • Fresh pepper to taste
  • Mexican cheese
  • Sauted onions
  • Sauteed tomatillos, chopped
  • Sauted Japanese eggplant
  • Black Olives, sliced
  • Fresh basil, chopped
  • Fresh pepper to taste
  • Salt
  • Assembling the pizza

    1. Preheat the grill and turn to low.
    2. Divide dough into two balls.
    3. Cover a pizza pan with tin foil and spray with Pam. Place pizza dough on tin foil and shape into a circle.
    4. Use tin foil to flip the pizza onto the grill. Grill for about 3-4 minues.
    5. Flip the pizza. Grill for about 3-4 minues.
    6. Add the toppings and grill until they are warm.
    7. Cool for five minutes.
