Dr. Freed's Fresh Tomato Pizza

Dough:
  • 3 1/2 cups of flour
  • 1 tsp salt
  • 1-2 TBS pizza seasoning
  • 1 cup water
  • 2 TBS yeast
Combine all dry ingredients. Add water. Knead until dough is smooth and satiny. (This can be done in a food processor. When the dough forms a ball, count to 50 and then turn off the processor.)

Let the dough rise until double in size (approximately 1 hour.)

Pizza Ingredients:
  • Fresh Tomatoes, sliced
  • A can of black olives, sliced
  • 1/2 pound shredded Monterey Jack cheese
  • 1/2 pound shredded Cheddar cheese
  • Parmesan Cheese, optional
Assembling the pizza

  1. Preheat oven to 375 °
  2. Roll pizza dough to the size of a large cookie sheet.
  3. Spray cookie sheet with Pam. Place pizza dough on cookie sheet. Crimp sides to form an edge.
  4. Lay sliced tomatoes on top of dough.
  5. Sprinkle with olives and cheeses.
  6. Bake until crust is golden brown and cheese is bubbly -- approximately 35-40 minutes.
  7. Cool for five minutes. Serve with parmesan cheese.
