My Recipe - Mexican Lasagna
A Delicious Entree For the Whole Family
Ingredients:
- 2 10-oz. pkgs. frozen mixed vegetables
- 1/2 onion, chopped
- 3/4 cup tomato sauce, divided
- 1 tsp. chili powder
- Salt
- 3 corn tortillas
- cup grated cheddar or muenster cheese
Directions
- Preheat oven to 350 degrees.
- Puree the vegetables, onion, 1/2 cup tomato sauce, chili powder and salt in food processor.
- Place a tortilla on the bottom of a buttered pie plate. Spread with vegetable sauce. Add second tortilla, rest of sauce and then third tortilla. Cover with remaining 1/4 cup tomato sauce and cheese.
- Cover with foil and bake for 25 minutes until heated through.
- You may want to put it under the broiler for a minute to brown the melted cheese.
