Mom's (but not my mom's) Meatloaf

Ingredients Directions
  • 2 lbs. ground beef
  • 1 egg
  • ½ cup breadcrumbs
  • ¾ cup ketchup
  • 1/8 cup mustard
  • 2 tbs. onions
  • 1 tsp. salt
  • 1 tsp. black pepper
  • 1 tps. garlic powder
  • 1 pkg. of sliced bacon
  1. Put all the ingredients, except for the bacon, in a large bowl. Mix well.
  2. On a large cookie sheet, form a loaf with the mixture.
  3. Place the strips of bacon around the loaf, creating a layer of bacon.
  4. Bake the loaf in an oven at 325° for 45-60 minutes.

To add that little something extra to the meatloaf, do one or more of the following things:

  • Squirt some additional ketchup on top of the bacon before baking, making a design such as a smiley face.
  • Add a hard boiled egg to the center of the loaf before baking.
  • Serve with mashed potatos, covering both the potatos and the meatloaf with gravy.
  • Leftover meatloaf makes a great sandwich for lunch the next day.
