Dr. Shapiro's East-West Meatballs

Ingredients: Meatballs Directions
  • 1 can Pineapple Chunks
  • 1 lb. ground beef
  • 1/2 cup seasoned breadcrumbs
  • 1 egg
  • 2/3 cup milk
  • 1 tablespoon butter or marg.
  • 2 tablespoons veg. oil (or cooking spray)
  • 1/8 teaspoon curry powder
  • Combine beef, breadcrumbs, egg and milk - mix well and let sit in fridge for minimum of two hours. Take meat-mix and form into meatballs (approx 1 to 1 1/2 inch in diameter) putting a pineapple chunk in the center of each meatball.

    Preheat oven to 375 - preheating pan/tray (prepared with oil/spray and curry powder). Place meatballs on tray with extra pineapple placed on top of meatballs. Cook for 10 minutes - then turn meatballs over and cook an additional 10 minutes. While cooking prepare sauce:

  • extra pineapple juice (from chunks or extra cans)
  • 1/3 cup vineger
  • 1/4 cup suger
  • 1 tablespoon corn starch
  • 1/8 teaspoon salt
  • 1 tablespoon soy sauce
  • Stir together sauce over medium heat until thickens - add cooked meatballs (you might want to go to a larger sized pan at this point) and simmer until ready to serve. Great over rice or noddles.
