Grandma's Chicken Soup
Ingredients
- 1 whole chicken cut up
- 3 celery tops
- 1 onion (quartered)
- 4 whole carrots (peeled and cut in chunks)
- 1 small bunch parsley
- 1 parsnip (peeled and cut in half)
- 2 teaspoons salt
- 2 cubes of chicken boullion
Directions
- Combine all ingredients in a large pot and fill with water.
- Simmer mixture for 1 hour or until chicken and vegetables are tender.
- Let cool.
- Strain broth from other ingredients.
- Chill broth in refrigerator for two hours and skim off fat.
- Dice chicken meat and vegetables.
- Prepare noodles of your choice.
- Combine broth, noodles, chicken meat, and vegetables and heat to desired temperature.
