| In a mixing bowl cream together the sugar and
canola oil. Then add the eggs and beat until fluffy. Pour two tablespoons
of vinegar into a measure then add enough milk to get one-cup. Measure
together the flour, baking soda, salt, and add alternately with bananas
and milk mixture beating well after each addition. Turn into greased
9.5" x 5.5" x 2.75" loaf pan. Bake in moderate oven (350° F) 60 to 70
minutes or until done. Remove from pan and cool several hours or
overnight (good luck) before slicing. Makes two loaves. For a more
"heart friendly" recipe you can use half the oil and reduce fats by about
half.
