Dad's Banana Bread

    •  2c. sugar               •  4c. sifted flour
    •  1c. canola oil          •  2t. baking soda
    •  4   eggs                •  2t. salt
    •  2T. vinegar-plus-milk to make 1 cup liquid
    •  2c. mashed, ripe bananas (5-6)
    In a mixing bowl cream together the sugar and canola oil. Then add the eggs and beat until fluffy. Pour two tablespoons of vinegar into a measure then add enough milk to get one-cup. Measure together the flour, baking soda, salt, and add alternately with bananas and milk mixture beating well after each addition. Turn into greased 9.5" x 5.5" x 2.75" loaf pan. Bake in moderate oven (350° F) 60 to 70 minutes or until done. Remove from pan and cool several hours or overnight (good luck) before slicing. Makes two loaves. For a more "heart friendly" recipe you can use half the oil and reduce fats by about half.
