- 2/3 cups Hershey's Cocoa
- 3 Cups sugar
- 1/8 teaspoon salt
- 1 1/2 cups milk (whole milk)
- 1/4 cup butter
- 1 teaspoon vanilla
- Combine: Cocoa, Sugar, Salt in a large saucepan (3 quart size).
- Add milk gradually, mix thouroughly, bring to a "bubbly" boil on high
heat, stirring continuously.
- Reduce heat to medium and continue to boil the mixture, (stir only
occasionally), until it reaches a temperature of 232 degrees
Farenheight, or until a small amount of mixture forms a soft ball when
dropped into cold water. (Try picking up the amount dropped into cold
water with your fingers to form the soft ball!)
- Remove from heat; set pan in cold water to cool and add butter and
vanilla (before mixture is cool).
- Beat until fudge thickens and looses some of its gloss.
- As soon as it looses it gloss - quickly form fudge in a buttered pan.
(8"x8"x2").
- Cool. Cut into squares. Yields about 3 dozen squared
