  1. Scald milk.

  9. Once the mixture is almost too thick to mix in a bowl, mix in lemon juice.
  10. Use some of the remaining flour to coat the raisins so they don't clump.
  11. Knead in raisins and remaining flour.
  12. Let rise in two large bowls for one hour. Beat down. Let rise again.
  13. Form into 3 loaves. Let rise.
  14. Brush with egg white.
  15. Bake 10 minutes at 350 ° reduce to 300 ° and bake for 50 more minutes.
