Oma's Potato Bread
Ingredients
- 3/4 cup sugar
- 6 cups flour
- 6 TBS butter
- 1/2 TBS Lemon Juice
- 1 cup milk
- 3 eggs
- 2-3 cups mashed potatoes (about one pound raw = 2 large potatoes)
- 3 TBS Yeast
- 1 1/2tsp salt
- Raisins (optional)
Directions
- Scald milk.
- Add 1 tbs of sugar to milk.
- Melt butter in a separate bowl and allow to cool.
- Cool milk to lukewarm and then add yeast.
- Beat two eggs and add the yolk from the third. Set aside the remaining egg white for glazing.
- Add coole mashed potoatoes and sugar to the eggs and mix thoroughly.
- Stir in the yeast mixture.
- Add the flour gradually.
- Once the mixture is almost too thick to mix in a bowl, mix in
lemon juice.
- Use some of the remaining flour to coat the raisins so they
don't clump.
- Knead in raisins and remaining flour.
- Let rise in two large bowls for one hour. Beat down. Let rise
again.
- Form into 3 loaves. Let rise.
- Brush with egg white.
- Bake 10 minutes at 350 ° reduce to 300 ° and bake for 50
more minutes.
