Tuna Casserole
You Need:
- a 10" by 6" baking dish.
- 1 can cream of celery soup.
- 3 eggs, beaten.
- 1 1/2 cup biscuit mix.
- 1 cup shredded monterey jack cheese.
- 1 can (6 1/2 oz. tuna, drained.
- 1/4 cup chopped pimento.
- 1/3 cup very hot water
Instructions:
- In a bowl, stir soup, eggs, tuna, and pimento then set aside.
- Mix biscuit mix and hot water well.
- Knead on floured surface until smooth.
- Press dough into bottom and up side of greased 10" by 6" baking dish.
- Sprinkle 1/2 cups of cheese on dough.
- Add tuna mixture; top with remaining cheese.
- Bake at 350 degrees for 50 minutes or until center is set.
- Let cool for 10 minutes and serve.
