Pumpkin Muffins

Ingredients
- 1/2 c. butter
- 1 c. sugar
- 2 eggs
- 1 c. pumkin
- 3/4 c. raisins
- 3 1/2 c. flour, divided
- 4 t. baking powder
- 1/2 t. cinnamon
- 1 t. salt
- 1 1/4 c. milk
Preheat oven to 400 degrees F.
Grease muffin tins that are 2 1/2 inches in diameter.
Cream butter and sugar until light and fluffy.
Beat in eggs and pimpkin.
Dredge raisins with 1/2 cup of flour.
Sift together flour, baking powder, cinnamon, nutmeg and salt.
Add dry ingredients and milk alternately by hand, mixing just until blended.
Do not overmix.
Add the raisins.
Spoon into prepared muccin tins.
Fill each tin 3/4 full.
Bake for 20 to 25 minutes.

Makes 2 dozen.
